I need to make salads for 800 people. I need help on figuring my food cost and what to charge for Broccoli/Califlower Salad and Macaroni Salad. I need recipes for this large a group...help!

Cost out one of my recipes for macaroni salad for 100. For the broccoli and cauliflower salad you will need about 22 pounds of broccoli and cauliflower and about 1 gallon of dressing per 100. Remember the charge for the food should be 3 to 4 times the cost of the ingredients.

Hi Ellen, thanks for your reply. My plans have changed and I have to make a macaroni salad for 800 people. They requested 35 gallons of salad. Can you tell me if Im correct in thinking 60#s of pasta is enough? Its just pasta,onions,olives and cheese with a roasted red pepper italian dressing. Would you have a recipe for that type of dressing buying kraft will break my budget!

60 pounds dry is good. It is more than you would use for the salad if there were several, but right for the just one.
See the mac and ham salad for 100 at the top of the slaw/mac/potato page fothe add-ins for each 6 pounds of pasta. Do add the extra vegetables, it makes a big difference in the salad. Frozen white shoepeg corn is a great substitute for part of the peas.
That dessing is home made with just a little commercial dressing. It should be a good choice for your dressing. To make it grilled red pepper, omit the cream and puree roasted red peppers as a substitute.
