I'm planning a smoked brisket, beans, and coleslaw meal for 100 for my son's graduation. I'd love to serve cornbread with it, and I'm wondering if it's possible to bake it ahead and avoid the last minute baking? Don't want it to dry out...Thanks for your helpful site!

Cornbread muffins could be made ahead and frozen, they keep better if reheated.
