I would like to try your Dijon wedding chicken and rice for 30 people. May I bake for 32 servings in a stainless steel chafing dish all at once, after thawed and for how long? What would you recommend for a rice accompaniment and the process for that? Can I cook the rice dish ahead and/or freeze?

Thaw in fridge. Allow an hour, see the discussion on the recipe..

I would do the baked rice on the recipe box page, cooking the rice and some slivered almonds in butter or oil briefly, before adding the boiling broth or water )broth is better). Best fresh, not reheated.
