Son's graduation party for 100

Hi Ellen! I'm planning on a graduation party for 100 people (about half of them teens). I'm planning on pulled pork, pulled chicken and hot dogs as the meats. Also planned is, potato salad, cole slaw, baked beans, mac n cheese, deviled eggs and chips.
I have the amounts from your 100 serving page, but what is the rule of thumb since I have so many items? I know I don't need to make 100 servings of each item, but how do you know how much of each?

This is not so many. Use the sides as they stand, you are feeding teens. OK, maybe cut back 10% on the potato salad and mac and cheese; but I probably wouldn't.

pulled pork, pulled chicken and hot dogs:
50 pounds raw boneless chicken plus pork, and I would do 30 pork, 20 chicken (bone in, twice the weight of boneless, for chicken.

Oh, hot dogs. Get Polish sausage or kielbasa, much tastier, about 60.
