I am cooking for 40 men outdoors over an open fire. They will be engaged in vigorous activity. Can you help me with a menu and portion sizes?

Count them as 50 and use the plan for 100 tables.

You want unfussy, substantial food. Maybe for dinner:
Chuck roast or chicken with gravy
Some kind of beans
Some kind of potatoes
Some kind of green thing- green beans with ham?
Good bread and butter

A good dessert such as big brownies or cake, which could be made ahead and brought in

Breakfast, eggs, ham or sausage, bread or French toast, fruit, juice and milk, maybe hot or cold cereal

Lunch, a hot dish such as soup or beans with sandwiches including cheese, fruit, cookies
