How to roast turkeys ahead of time

We are putting on a Christmas party for about 200 & I am interested in how to roast the turkeys ahead. We are interested in spatchcocking the turkeys. Do we brine the turkeys before we cut them up or after? If after, how long do we brine them.
You said the dark meat could be roasted the day before & the breast the morning of. How long should we plan for them cooking. We are using electric roasters. How do we reheat them for serving. Thank you
