Greek recipe called chicken kapama for 120 people

This tomatoey chicken stew with cinnamon is delicious on rice. Greek salad, good bread, maybe some dolmas?

There are two approaches, as with the stifado stew in the recipe box section- one just with tomatoes and cinnamon. Sometimes it is served with pasta that has a little Parmesan, sometimes with rice.

With original recipes, some giblets are stewed with the chicken, that is uncommon in the American adaptations.

You will need between 5 and 10 cups of butter and olive oil to do all the sauteing.

Brown 240 thighs

For 120, you would make a saute of about
6 pounds celery
20 onions
4 heads garlic

40 pounds whole or diced tomatoes, canned in juice
15 pounds tomato paste
10 quarts chicken broth
1 cup parsley
2 tablespoons crushed red pepper
2 tablespoons black pepper
1/4 cup dried oregano
1/4 cup ground cinnamon
5 cups red wine

Sauté onion, garlic, celery and butter 'till tender.
Add tomatoes, tomato paste, water, parsley, red pepper, garlic powder, oregano, black pepper, cinnamon and red wine.

Simmer the sauce about 30 minutes. Slide the chicken in, 30 minutes covered and 30 minutes uncovered. Or easier, add the chicken to an oven pan, bake at 350 for about an hour, uncovering the last 1/2 hour.
