Wedding Reception for 300

Hi Ellen, so glad to have found your website! I am assisting with food planning/prep for an at-home wedding of about 300 guests. Ceremony is planned for about 5:30pm with dinner at the same site immediately following. Due to the huge size we are trying to keep the menu very simple and inexpensive- I would appreciate your advice on how the following menu and qty:

135 lbs Chicken Tenders (still deciding on flavorings/marinades)-- cooking in large roasters/crock pots for ease of doing this much meat
10 gallons pasta salad
40 lbs tossed green salad
50 lbs bean or quinoa salad

Currently we are thinking of serving family style, although buying that many serving dishes might make us go buffet style instead.

I'm also going to bring up the idea of doing a dessert reception only.... Thank you!

This is not nearly enough food for 300 people, and I can't suggest you try to prep this in a home kitchen. If you are doing it all at home do PLEASE go with a dessert only reception.

135 lbs Chicken Tenders (still deciding on flavorings/marinades)-- cooking in large roasters/crock pots for ease of doing this much meat- need 150
10 gallons pasta salad- need 14 at least
40 lbs tossed green salad- OK
50 lbs bean or quinoa salad- need 12 gallons

need bread, appetizer tables, etc
