menue- chicken breasts,fish fillet,herb potatoes,cranberry pilaf,carmalised carrots,garden salad.
starters- cream of pumpkin soup,fruit kebabs, smoke marlin with corn fritters and cream cheese.

I am confused with the quantities, i need help please.

entree- chicken breasts,fish filet, potatoes,camalised carrots,pilaf,green salad.

What do YOU THINK THE QUANTITIES SHOULD BE ?

Are you serving the soup?

cream of pumpkin soup, cup per person, allow 6 ounces- about 6 servings per quart
fruit kebabs, per person 2
smoke marlin with cream cheese-3 per person
corn fritters- small- 3 per person, 2 larger

chicken breasts, 1 pound per 3 PLUS
fish fillet, 1 pound per 5
herb potatoes, 1 pound per 3 with rice, 1 pound for 2 if no rice
cranberry pilaf, rice pilaf? 4 pounds dry rice
carmalized carrots, 15 pounds

garden salad 7/8 the amount for 100, whichever one you choose from the plan for 100 list.
