Hi Ellen,
Would you please look over my menu for my daughter's grad party? It's an open house 1-5.

30 lbs. pulled pork
30 lbs. pulled chicken
10 lbs. swedish meatballs

3 of those large pans mac & cheese
2 roasters baked beans

3 1/4 gal. cole slaw
2 pasta salads
2 asian broccoli salad

7 large bags potato chips

veggie tray: 5 lbs carrots
3 lbs. celery
3 qts. grape tomatoes
8-10 cucumbers
3 lbs. broccoli
3 lbs. cauliflower
dip

1 gal. pickles
1 gal. olives

watermelon (just making small slices)

6 gal. ice tea (2 sweet, 4 unsweetened)
bottled water - several cases
pop - several 2 liters of various kinds

strawberry short cake:
36 pints of berries
12 cans whipped cream
18 pound cake loafs

plus we're renting an ice cream cart

I should have plenty of help at party time, but very limited help leading up to the party, which is why I didn't plan on a variety of fruit--takes too much time to prepare.

Does this sound adequate?

30 lbs. pulled pork
30 lbs. Sulled chicken
10 lbs. swedish meatballs
meats are good, you will definitely run out of meatballs though- 15-18 pounds would not be too much

3 of those large pans mac & cheese- you need at least 12 pounds dry pasta, that is more like 4-5 pans, plus 1 quart sauce per pound
2 roasters baked beans- you need 4 1/2 gallons

3 1/4 gal. cole slaw- OK
2 pasta salads- 6 pounds dry pasta total
2 asian broccoli salad- 15 pounds broccoli, approx

7 large bags potato chips- 1 pound per 12
Dip!- 1 cup per 8

veggie tray: plenty
5 lbs carrots
3 lbs. celery
3 qts. grape tomatoes
8-10 cucumbers
3 lbs. broccoli
3 lbs. cauliflower
dip- 1 cup per 8 if thin/ Ranch

1 gal. pickles- good
1 gal. olives- good

watermelon (just making small slices)- about 1/2 pound per person

6 gal. ice tea (2 sweet, 4 unsweetened) I would do at least 10, 12 would be OK, the new fruit flavors with green tea are festive; or some could be lemonade
bottled water - several cases- 2 per person, buy from somewhere you can return unopened cases
pop - several 2 liters of various kinds- see the beverage planning page for assortment and amounts, plan for 100
ice - at least 1/2 pound per person

strawberry short cake:
36 pints of berries
12 cans whipped cream
18 pound cake loafs
looks good!

plus we're renting an ice cream cart
mmmm lucky party goers

If you have a good many adults, consider dinner level coffee from the beverage page- very nice with a scoop of ice cream in it.
