Blanching green beans

Dear Ellen,
I wanted to blanch my green beans so they can keep the pretty green color. I normally blanch them in boiling hot water. I wanted to know if I blanched them in chicken both would they still keep their color please advise ASAP..

I have done it successfully. If you use a canned broth, do a test run.

However, do consider whether you will have any vegetarians at this meal; if yes, you need to dress with some shredded chicken or bacon bits, or label.
