I need to make enchilada casarole for 50 people however I'm making a ground beef one with red sauce and a chicken one with green sauce but my issue is I don't know how many lbs of each to buy.... PLEASE HELP

allowing 3 enchiladas per serving, I would make about 90 beef and 70-80 chicken. You will have some left, especially with heavy side dishes, but everyone will get their first choice.

Ypu meed about 1 pound cooked weight per 10-13.

If you are making rolled, one meat, allow 3 per person if self serve, 2 per person plus 10% if you are plating.

This is an OK guide for amounts, but be sure to add 10% if you are plating, and 50% if self serve:

Make at least 1 pan cheese or veggie for non-meat eaters. With 200 people, there will be some.
