Breakfast for 100

We are hosting a breakfast at a curling bonspiel for 100. We have two large quantity breakfast bake recipes and a biscuit and gravy recipe used at previous bonspiels (the recipes have good quantities and have directions on how to scale up or down). Do you calculate that everyone (all 100 people) will eat one serving of everything? Or do you scale back assuming that not everyone will eat everything.

Anne, these will be hungry folk, but I am not clear whether you want to serve all three items? Can you be more specific about the entire menu including other dishes? Write back.
