Tstan, the challenge here is that most people would choose tenderloin over brisket. I strongly suggest you switch to brisket and ham- mare typical and also less expensive.

Slice brisket- 60 pounds
Slice tenderloin- 65 pounds

OR
Slice brisket-85 pounds
Slice ham-45 pounds

Scallop potatoes 30 pounds potatoes per 100
Fresh yams 20 pounds per 100
You need 3 pounds butter per 100, and how about some cinnamon butter, too

Green beans-40 pounds

Garden salad- see the plan for 100 page, also covers the trimmings
cucumbers
tomatoes
croutons
cheese- About 4-5 pounds cheese per 100

Dinner rolls 12 pounds per 100
butter 3 pounds per 100
