Tstan, the challenge here is that most people would choose tenderloin over brisket. I strongly suggest you switch to brisket and ham- mare typical and also less expensive.
Slice brisket- 60 pounds
Scallop potatoes 30 pounds potatoes per 100
Green beans-40 pounds
