Roasted or grilled salmon ahead of time

Hi Ellen.. I'm making salmon for a party of 70. I'm planning on 1/3 lb pp. Do you have a recommendation as to how to prepare ahead? I'm OK with serving it just warm or room temp.

Chilled, steamed salmon is a traditional summer dish, do not serve room temp. Steam perfectly day before and serve with mayo and capers among the garnishes.

Thanks.. A couple of follow-ups...

1)Is a 1/3 lb pp your recommendation?
2)Would a chilled grilled or roasted salmon work too? I would perhaps serve with an Italian salsa verde..

Yes, grilled chilled would be possible, you have to watch not drying it out. 1/3 pound per person is fine.
