Simple Interesting Meaty Beans for 300

Based on canned beans. The sweet and sour mix is subtle but popular.

3 pounds chopped onions
150 pounds (50 – 48 ounce cans) canned beans, fancy quality
54 pounds (60 – 14 ounce cans) pineapple tidbits in juice
76 pounds (43 – 28 ounce cans) diced tomatoes with juice
5 cups molasses
10 pounds bacon ends and pieces, chopped
4 3/4 cup (2 pounds) brown sugar
2-2 1/2 cups (1 large jar) dry instant coffee granules
2 cups vinegar PLUS 1 cup tomato paste OR 1 Bottle Original Bullseye BBQ Sauce

Sauté the bacon and onions; add to the beans along with the tomatoes and juice. Divide into roasters or baking pans.
Mix the vinegar and molasses, add brown sugar, juice from pineapple and coffee granules. Add remaining ingredients, mix well.
Bake covered in 325 F oven for 1 hour. Remove cover and bake 1 more hour or until thickened.
