Rice Side Dishes and Entrees for 100

The next 3 recipes are adapted from the California Rice Board.

Baked South of the Border Rice - makes 100 servings

Note: Remember- 100 servings serves about 80 people for buffet service.
Serving size:
One No. 6 scoop (2/3 cup) provides 1 bread alternate

Each serving provides: 200 calories, 3 grams protein, 1 gram fat, 26 grams carbohydrate, 1 gram dietary fiber, 0 milligrams cholesterol and 445 milligrams sodium.

Serving suggestion: Serve with any Texmex entree such as tacos, beans, salad and tortilla chips.

Ingredients Weights Measures
Uncooked California medium grain rice* 7 lb 14 oz 1 gallon + 2 cups
Measure 6 cups of rice into each of three 12x20x2 inch steamable pans.

*If using long grain rice, use 6 lbs 11 oz of uncooked rice.

Condensed tomato soup 3 lb 2 oz
Water 2 gallons + 1 cup
OR may sub 2 1/2 gallons tomato sauce or diced tomatoes in juice for water plus soup
Dehydrated onions
Hydrate according to package directions.
OR
Chopped fresh onions

Chili powder 3/4 cup
Garlic salt 2 tbsp
OPTIONAL: frozen mixed vegetables or peas and carrots, cooked 6 quarts
Combine soup and water, onion and seasoning in stock pot. Bring to a boil. Pour approximately 14 cups of soup mixture over each pan of rice. Cover tightly with foil. Cook 30 to 40 minutes in 350-degree oven or until liquid is absorbed and rice is tender. Stir in optional hot mixed vegetables just before serving.

Cowboy BBQ beans & Rice - makes 100 servings

Each serving provides: 200 calories, 5 grams protein, 1 gram fat, 23 grams carbohydrate, 2 grams dietary fiber, 0 milligrams cholesterol and 213 milligrams sodium.

Serving suggestion:A mix of cooked rice and cooked beans with seasonings. Nice with hamburgers and cole slaw.

Green bell pepper, chopped 1 lb 1 qt
Heat oil; add onions and bell pepper. Cook 8 to 10 minutes until tender.
Cooked California medium grain brown rice
Cooked California medium grain white rice can be substituted
15 lb 10 oz 3 gallons + 2 cups
Cooked pinto beans, drained 27 lb 12 oz 3 gallons + 2 cups
Prepared barbeque sauce 3 qts
Add beans to onions and bell peppers, stir well and heat thoroughly. Add rice, stir and heat until hot heated and well blended.

Cheesey Rice - makes 100 servings

One No. 8 scoop (1/2 cup) provides 1 bread alternate

Each serving provides: 117 calories, 4 grams protein, 1 gram fat, 22 grams carbohydrate, 0 grams dietary fiber, 3 milligrams cholesterol and 271 milligrams sodium.

Serving suggestion: Gives a protein and flavor boost with entrees using tomatoes or tomato sauce.

Cooked Calrose rice (cooked in chicken broth) 15 lb 10 oz 3 gallons + 2 cups
Parmesan Cheese 1 lb 1 qt
Chopped fresh parsley,
leaf only,
Italian flat preferred
6 cups
Sprinkle 1/3 of cheese and 1 1/2 cups parsley over hot cooked rice in each of three 12x20x2 inch pans, stir gently to blend. Top each pan with 1/2 cup parsley.
