Rice Side Dishes and Entrees for 100
The next 3 recipes are adapted from the California Rice Board.
Baked South of the Border Rice - makes 100 servings
Note: Remember- 100 servings serves about 80 people for buffet service.

size:
One No. 6 scoop (2/3 cup) provides 1 bread alternate
Each serving provides: 200 calories,
3 grams protein, 1 gram fat, 26 grams carbohydrate, 1 gram dietary
fiber, 0 milligrams cholesterol and 445 milligrams sodium.
Serving suggestion: Serve with any Texmex entree such as tacos, beans, salad and tortilla chips.

Measure 6 cups of rice into each of three 12x20x2
inch steamable pans. *If using long grain rice, use 6 lbs 11 oz of uncooked rice.

Hydrate according to package directions.

Combine soup and water, onion and seasoning in
stock pot. Bring to a boil. Pour approximately 14 cups of
soup mixture over each pan of rice. Cover tightly with foil.
Cook 30 to 40 minutes in 350-degree oven or until liquid is
absorbed and rice is tender. Stir in optional hot mixed vegetables just before serving.
