Hi, Bill, In the US, the commonly available plain soy yogurts are SILK and NANCY's, both available in our upscale grocery stores here in Texas. These are good- you may not be able to use them for cultures If you go to my soy yogurt page (go to the Clearlight section) there is an address for GEM Cultures, which sells a soy culture for making your own soy yogurt at home. I made my own soy yogurt using a thermometer some 16 ounce glass jars with lids and a bit of plain goat yogurt . With the bulb cover off in my oven (some ovens don't have) it is about 108 degrees with the light left on, a great temp. for culturing yogurt. I bought the unsweetened soy milk in the aseptic containers which assures a sterile start. Just add one teaspoon of the yogurt and stir till dissolved. It should be thick and sour in about 12-18 hours in the oven. Hang a sign so no one turns on the oven or the good germs will die! All the best! |

Hey folks, I work in the natural foods industry, and last time I checked, all Silk yogurts had evaporated cane juice, aka sugar. Nancy's flavored yogurts are fruit juice sweetened, and I thought the plain variety also was fruit juice sweetened. So, as far as I know, neither of those really qualify as unsweetened. Plain, yes. Unsweetened, no. |

There are no unsweetened plain soy yogurts on the market in the US, are there?... I was beginning to suspect that. :( Please correct me if this is wrong and there is some company out there selling them. |

yes there are unsweetened plain yogurts available. If the label does not list any fruit juice or sweetemer, it is unsweetened. Look at continental, for example. Silk has sweetener because the soy milk is sweetened, cow milk is not. |

Antonia is seeking unsweetended SOY yogurt, not yogurt made with cows milk. Not everyone can tolerate yogurt made with cows milk and it is very frusterating that one cannot find a SOY-based yogurt without added sweeteners, even if it is only friut juice. With our culture so hooked on sugar, even the organic producers are leary of making an unsweetened SOY yogurt for fear that it will not sell. |

From the Silk website FAQs: "Can you make a sugar-free soymilk or cultured soy yogurt? We offer Silk Unsweetened Soymilk for those of you who enjoy soymilk, but don't care for the added sugar. In the case of our Silk Cultured Soy yogurt, sugar is required to help feed the live cultures. We do understand the needs of our diabetic or health conscious consumers and would like to point out that our soymilk contains less sugar per serving than a glass of milk. Fat free dairy milk has 11 grams of sugar per serving, compared to 4 grams of sugar per 8 oz. serving of Silk Organic Plain Soymilk. One 8 oz. serving of Silk Unsweetened Soymilk has 1 gram of sugar. Look for Silk Unsweetened at your local heath foods stores or ask about it at your local grocery." |

It depends on the company, but all must be cultured with live cultures. Patuerized milk is heated to 105 degrees, live cultures added, held at this temp for 3-12 hours until it thickens. However some are pastuerized after culturing, killing te cultures. The ones that say "live cultures" are made from pastuerized milk, but NOT repastuerized after culture. Many American have gelatin, guar gum, or another thickener added. Natural yogurts from non-concentrated milks are rather soft, almost liquid. Fruits and flavors and sweeteners are usually added after culturing. |

We are posted overseas with the US Embassy. My son is highly allergic to cow milk proteins. I would like to make soy yogurt for him (it is not available locally). I looked in you clear light section and could not find the addresses where I can buy the starter with live bacteria non casein or whey. Thank you. |

Cultures 30301 Sherwood Road Fort Bragg, CA 95437 USA (707) 964-2922 www.gemcultures.com/index.htm If all else fails, you can buy mixed lactobacillus acidophilus/bifidus cultures not on a dairy base in some health food stores, usually as a liquid. This is the base culture for yogurt and you could try it that way for your starter. |

The folks at GEM cultures, above address, sell cultures that can make a cultured soy product from unsweetened soy milk. It is more like kefir than yogurt, but is very simple to make and has those friendly bacteria. |

Wildwood Natural Foods, out of California produces a soy yogurt with no added sugar. It's the only brand I have found. I live in Colorado and they do not distribute to my state. Perhaps you will have better luck. Here is contact info if you can't find the brand on your health food store shelves.

I've successfully made my own soy yogurt by starting the first batch with Silk soy peach yogurt. I make 2 more batches, and by the 4th the sweetner is gone. :o) I've gotten good results up to 7 batches out. |
