how many pounds of beef roast and how many dozen eggs would it take to make enough beef and noodles to feed 250 people----will be using large electric roasters to cook the noodles in---how long will they need to be cooked---the noodle recipe,I believe is 3 eggs yolks and 1 whole egg per batch and they will be dried noodles thank you |

Per 100 people (two roasters), meat on the light side: 18 pounds beef cubes 9 pounds dried noodles (the kind that come in the dried bags) OR equivalent amount home made noodles 9 quarts beef gravy onions peppers tomatoes, etc and seasonings per your recipe You do not say how many pounds of noodles your recipe makes... |

You could go as high as 30 pounds beef for this recipe for heavy meaty quality- using a well-trimmed boneless cut- I would probably go with shoulder clod (boneless chuck, precooked tender to develop the flavor and gravy- then mixed with the cooked noodles. |

Our church is putting together a beef supper and will be serving up to 350 people with a menu of BBQ beef, beef and noodles, and sliced roast beef w/gravy and mashed potatoes. We have purchased 200#'s of beef roast and will be cooking 12#'s of roast per roaster. Your help with determining the number of pounds needed for each entree and any recipe suggestions would be helpful. |

Your 200 pounds will shrink about 1/3 with cooking. This 125 pounds of meat will probably be fine- the roast beef and gravy will take the most per serving because it is slices, using about double either of the other per person. So if you want equal number sof plates, you would use a scant 1/4 for the beef and noodles, the second 1/4 for BBQ beef, and the half for roast beef. I have no idea how your crowd would split- it depends on local custom, weather, time of day, cost of the different plates, etc. |

Hi, this depends on what you are roasting: standing rib roast on the bone, you need 1 pound raw per person, but a lean, well trimmed top round or rump roast, you need 45-50 pounds per 100 people if you will slice and plate it, about 10% more if it is self serve. Bef tips, you want 5 ounces cooked ready to eat per person, allowing for shrinkage while cooking that is 2 pounds for each 5 persons, or about 40 pounds per 100 people. |

Check the quantity guide in planning and shopping for large holiday meals, at the top of the big pots session. It really depends on the use and the eaters; 1/4 to 1/3 cup is the minimum, but I never make less than 1/2 cup per person for my family- they really like gravy. |
