Prune Puree

Hi,
I'm looking for a simple recipe for prune puree. I do a lot of low fat cooking and this is supposed to be really good as a substitute for fat in baking. Thanks in advance to anyone who can help.

Combine 1-1/3 cups (8 oz.) pitted prunes and 6 tablespoons water in container of food processor.

You can also add 2 tablespoons lecithin granules.
Pulse on and off until prunes are finely chopped. Then process at high speed until the mixture is smooth.
Use immediately, or place in an airtight container and store for up to 3 weeks in the refrigerator.

To replace 1 stick (1/2 cup) butter, start with 1/3 cup prune puree. If not moist enough, add more puree up to 1 to 1.
