I am trying to find a substitution for potato starch in the gluten free flour mix. I can use rice flour and tapioca, but I can not use potato starch (I am allergic to potatoes). Does anyone have any ideas on substitutions? Also, what can I use instead of baking soda. I am allergic to that also. Thanks |

Gluten free pasta dough mix Hi All, I am wanting to manufacture pasta for celiac intolerances. Could someone please advise me as to whether I can use eggs and what flour I can substitute for my italiann 00 ingredient? Many thanks Oliver. |

Eggs yes. Pasta is VERY difficult without gluten. I have made gluten free lasagna using homemade gluten free creppes instead of lasagna noodles. Check out Bette Hagman's gluten free cooking and baking books for more help. |
