I'm a little confused. Homemade noodles aren't dry- you need about 1 pound for 4 main dish servings. Dried noodles like come in a package, the amounts and variables are discussed on the spaghetti/ lotsa pasta page. One pound dry can serve from 4 for a large entree serving to 8-9 for a side dish serving.

As to the broth, you want 1/3 to 1/2 cup gravy per person in your dish. The best bouillon type starter (better than some canned broths) in most areas is called "Better than Bouillon"/ It comes in a jar, very chickeny, not too salty. When I an cooking the noodles for a dish like this, I sometimes use the salty poowder or cube type bouillons to flavor the water I boil the noodles in, just to pack in some flavor, instead of salt; but I don't reuse that water in the dish, I use Swanson's lower salt broth or homemade or better than bouillon to make the gravy.

Does that help at all?

What recipe would you suggest for noodles to feed 125 people.

If this is a main dish casserole, you would want about 12 pounds dry noodles per 100. See the spaghetti/lotsa pasta page for advice ofrn reheating.

Maryann, see the basic budget entrees for 100 section on the Big Pots index page. You can use the baked spaghetti recipe for quantities for noodles and meat.

1 pound whole raw chicken makes 1 cup solid meat. Most recipes for chicken and dumplings/ chicken stew allow about a half cup of meat per person, so you would want 1 pound whole raw chicken for each 2 people.

Hello, How many servings can I get from a pound of cooked Homemade noodles? Also how many servings can I get from a pound of cole slaw?
Thank you so very much.

1 pound fresh noodles cooks up to 5 cups, so the number of people served depends on whether this is a side dish or a main dish. To me, a cup of cooked noodles is one moderate serving.
If your pound of slaw is a pint, it makes 4 modest servings.
