S.O.S. I am roasting two capons at one time in a regular Conventional oven - do I have to increase the temperature - ?? or do I use a somewhat longer cooking time - ?? Each capon is 8 lbs. Would appreciate any help I can get.

Thanks.

Hi,

Be sure your chickens are rinsed qand dried before roasting/ prepping.

With a regular oven, two chickens is no problem, no change. It is ALWAYS wise to stick an instant read thermpmeter into the thigh when you think it is done. remembering the temp will rise at least 5 degreeshile they "rest" (sit outside the oven before carving). Make soup with those beautiful bones and scraps.
