Rice depends on side vs main diush. For side servings, about 8 pounds per 100 people.

08/28/08 		Denise, there is a useful guide for you on the beverage planning page. If you want success on a hot day, make sure the ingredients are all chilled before you mix them. There is also a "punch" thread with ideas and links for recipes.

i am cooking for 130 people we will serve red beans and smoked sauage cut up in to beans.
i want to put down white rice 1st covered with red beans. i forgot how much rice do i need
is it 1cup rice to two cups rice and can i cook this in the oven in alum pan covered with foil and how long thanks mike

You want to cook at least 8 pounds of rice per 100 for this dish; 4 ounces cooked as a serving is a half cup, and it is not enough. 10 pounds per 100 would give you some leftovers, but you would not run out.
Yes you can bake it, it is an easy way to make rice for a large group[. The amount of water depends on the type of rice, For this dish I recommend long grain converted or basmati. You use about 1 1/2 times the volume of water to rice for these rices.

We are hosting a wedding and they do not use canisters of pop for mix for alcohlic drinks so we are having to purchase 2 litre bottles of soda pop for mix. We would probably use a mixture of Pepsi/coke, Ginger Ale/Sprite, we will also be purchasing Clamato Juice and Orange Juice as well as water for mix as well. Could you please tell me some idea of how many bottles we would require?

1 24 can case is the same as 4 2 liter bottles.
