I'm making potato pancakes. Can I keep grated potatoes in water ovoernight in refrigerator and then drain them tomorrow and continue with my recipe |

Would like to know if I can grate potatoes for potato pancakes and leave the grated potato in water overnight and continue my recipe the next day. |

Hi, Judy, You Have to cover the potatoes with water or evev better awater to which you have added a spoonful of fruit-fresh (ciutric acid_ or powdered vitamin c, In the morning, mash the water out vigorouly in a strainer and dry on paper towels, or you get spatters and sogs. Soaking actually removes a bit of starch which is a good thing. You know not to use new or redskin potaoes? Ellen |

new potatoes I am roasting 50 lbs of new potatoes in 2 seperate roasters for a rehearsal dinner. For elegance, I would like to remove the peel just around the center. Can I do this the night before, cover them in water, and then drain the next morning?? What would be the best recipe for the job. It is a sidekick to pork loin & prime rib. |

Yes This also cuts the roasting time. Drain wel, even roll ontyo some big sift towels, water is the enemy of raosting, then roll in oil. For this menu, I might crfush some onion or garlic into the oil and sprinkle on some rosemary. |
