All the best southern cooks I know, cook the peas separately from the rice and mix at the last minute. This allows for some wonderful variations in the seasonings for the peas. If you are going meat free, this is especially helpful. Do not forget the white meal buttermilk cornbread, the greens and the sweet tea or buttermilk- and maybe a nice peach cobbler for dessert. MM- Ellen |
