I'm new to Tofu. I have a recipe for Tofu burgers and it only says how to mix all the ingredients. I thought Tofu had to be soaked before hand, is this so? |

Tofu is a fresh, ready to use food. There is a very expenxive dried tofu, very handy for camping, but that isn't widely available. When I make burgers with fresh tofu, I crumpble it in a white paper towel in a strainer or colander and press a little moisture out. Usually, I put a small plate and then a can on the plate, and put the whole thing in the refrigerator. This gives it a more meaty texture and the slightly squeezed tofu soaks up flavors better. |
