Wine and Cheese reception for 115

02/20/08 		Hosting a wine & cheese reception before a jazz concert for 115 adults. Also will have grapes, vegetable tray, crackers & breads. Want to keep it simple for transporting since it will be in a gallery next to the theatre.
1. Is 10 lbs of assorted cheeses enough?
2. Would like to cut hard cheeses in 1" cubes for ease of serving - how many pcs approx from a 1 lb block?

02/23/08 		Usually for a wine and cheese party you do 20-22 pounds per 100 people. One pound of cheese is almost exactly the same size as 1 pound of butter: with 10 pounds for 115 people, you are looking at less than 1/3 a stick of butter per person, or about 3 bites. 6-8 bites is rather a minimum here, some can be cheese logs or cheese balls if the budget demands it.
