If I have a pesto recipe that calls for fresh basil, but all I have is dried basil, how much sould I use in substitute for fresh basil? |

Hi, Russell, This is one case in which the substitution is not satisfactory- it does in both the flavor and texture of the sauce. I would use fresh flat parsley or fresh cilantro to make a cousin sauce, or make something different such as a garlic and olive oil sauce, or a sauce of fresh chopped tomatoes. Either of those will accept some dried basil. Keep on cooking- Ellen |
