We are planning the food for about 200 people at graduation, how much do we need? We would like something a little bit different but not too expensive. |

The amount of food you need will bepend on the time of day of you reception, If it comromes right at mealtime, the crowd will eat about twice as much! Before you plan your shooping please read the general notes and cautions on my appetizer page: http://www.ellenskitchen.com/bigpots/plan/appetizer.html If you have a good bakery locally, consider ordering small rolls for a bunch of the sandwiches, looks great. You can get small dinner rolls (each 3 count as one regular sandwich) or what caterers call turkey rolls, which are about twice as big. Each two count as 1 regular sandwich, they are about 1/2 the size of a hot dog or burger bun. You can also get mini hotdog buns, use "Little Smokies" as the weiners- they look cute! You can also get speciaslty breads such as the swirled light and dark rye. Or the timy loaves that make mini sandwiches- for some reason, people love the looks of these. For reception sandwiches, figure 2 ounces of cold cuts or 1 ounce of meat and 1 ounce of cheese for each regular sandwich. If you will have other foods, allow about 300 regular sandwiches. Use thin sliced or shaved meats- they make an easier to eat sandwich. Avoid drippy stuff such as chicken salad unless you use the rolls. On bread, they fall down dressed up teenage fronts. Sandwiches made with cream cheese spreads are a little different and very easy to eat. You can use the traditional chopped olives, but these are not everyone's favorite. Make a savory spread by mashing in shredded dried beef, such as is used for creamed chipped beef, or shredded shaved deli beef with chopped scallions, a little mustard. Or go sweet by using chopped rasins with finely chopped apples (leave the peel on for color) and chopped pecans. Stir in a jar of apricot or pineapple preserves for flavor and spreadability. You add about 2 pounds of add ins to each 3 pound block of creamed cheese. Cream cheese sandwiches MUST be chilled/ refrigerated until served. Also, pimento cheese is useful for about 10% orf the sandwiches. People tend to skip tune salad because of the odor, but "chicken" sa;lad, actually made with roast turkey, is simple and popular.
Have bowls or plates of pickles, olives, etc. About 4 gallons for this many people. There is an east recipe for horseradish pickle chunks on my BBQ page that starts with purchased dill pickles and is good.
For 200 people, I might make 5 fruit and 4 veggie trays. Buying and prep directions for fruit trays and veggie platters at: For teens do not forget the sweets! Cookies, cupcakes, etc- whatever is noy drippy or crumbley. Figure 2 dessert portions for each person for teens.
Nowadays, don't forget bottled water along with the sodas or punch, and if parents are attending,coffee will be much appreciated. |

I was reading the article for making these cute snacks for 200 people. Well, all I need to know is what kind of bakeries do you recommend I ask to make small hot dog buns? I won't have too many guests. Maybe 30 at the most,so maybe 50 little hot dogs? Are little smokies just like hot dogs? Will the kids like them? I am having a birthday party for my son who will turn 4 this month. It would be nice to have small size hot dogs. Do you know if there's such a thing as small hot dog franks besides little smokies?

Hi, Delores, Little smokies are smaller than the mini hot dogs, which are about 1/2 the size of regulars- I guess you could call little somokies "micro-mini-s". I don't know about the kids- they have a little more spiice and texture than regular. What you could do is get the bun length and trim off the ends and split in the middle- this would give you two just the right size that look like vienna sausages. 50 would probably be planty, but I would make 60 anyway, especially if there are some dads in the crowd. ANY bakery can doi the buns, jst tell them how long you want them. |
