Here's the thing, the guys who smoke briskets on their Webers say keep the heat low and cook it 1-2 hours per pound! To an internal temp of 180 degrees, above that will be dry-dry-dry. I cook whole brisket in the oven at 300 for 1 hour, then 175 for one hour per pound. So, I hope you have some chicken or something for tonight... |
