Roasting soynuts

I have tried roasting soybeans using Ellen's method listed here (soaking, cooking, then roasting) and have also tried roasting them without cooking first (just soaking). Both ways they taste good but are not crunchy. How do I get them crunchy like the store bought? Thanks...

Hi, Deanna,
The crunch comes in the last 10 minutes or so of oven roasting, and it is SO easy to go from crunch to burn in a flash. Extend your cooking time by about 5 minutes, and also, the beans should be a single layer in the pan- even better if there is a little space around each bean. If that is not enough time, add a bit more the next time- Ellen

Thanks, Ellen. I will try my next batch a little longer. I also think I've had too many in the pan.
