In some of your recipes you call for fructose -- is this something that the folks at my co-op can help me find? What is it -- a liquid or powder? Is it used for sweetness or for texture or both? Can I substitute anything for this? |

Hi, Carol, Fructose is available as a liquid, but what I use is a powder. The texture is somewhat between regular and confectioner sugar, and it is about twice as sweet as sugar, so if you use regular sugar you need more. Because of the way it metabolizes, fructose does not cause nearly as much glycemic reaction as sugar. I have diabetic family members, this is important for them. I can buy it in bulk at the natural foods grocery, so I am sure you could get it (maybe from Frontier?) for your coop. I am experimenting with baking with stevia, but those recipes are not ready for prime time yet. Thanks also for the heads up on the editting mistake in Jewel's Brownie Bars, sometimes, I stop in the middle and then forget to go back. Hope it works great for you. I sometimes use really thick homemade applesauce or other fruit sauce for the fruit butter. Keep on cookin'- Ellen |
