06/18/08 		I need to know how many pounds of chicken salad to purchase for 75 guests. It will be served on a croissiont ?? Also I am making macaroni sald.. How much do I need to make ??
My daughter wants to serve a fruit cup also.. How much fruit should we buy and cut up ??

06/18/08 		For 75 people, you need 3/4 the amounts for 100.

For fruit info, see the fruit tray page. There are several different sets of suggestions, as well as directions for a fruit tray for 25 and for individual fruits in case you decide to make a custom mix.

I use 6 pounds dry pasta to make pasta salad for 100.

11/19/08 		how much meat do you need for rehearsal supper
I am hosting a rehearsal supper for 75 people. I am having the meat catered in. We are having three meats. Chicken breast, Brisket and pork loin are the meats. How much should I buy of each? How much potato salad, pinto beans and rolls do I need?

11/19/08 		This sounds like a BBQ plate. If it is self serve, plan 45 servings beef and 25 each pork and chicken. I know that is more than 75 servings, but people eat more, and some of each, when there are sevral desirable choices. The sides are covered on the bbq and brisket page- pinto beans the same as baked beans.
