I would like to can Dolmas with fresh grape leaves. Some will be vegetarian and some with lamb. What should be in the solution? How long should the jars be processed? With and without lamb? Do I need to use a pressure canner or can I get by with a water or steam bath? Any suggestions are appreciated. |

Dear Michelle, Please reconsider your plan. Canning meat in any food at home is very technical- absolutely MUST use pressure canner- and it takes commercial equipment to safely process tightly packed items like rice-stuffing. It would be practical to can the fresh leaves, or to FREEZE the dolmas, but I cannot recommend canning them. Be safe- Ellen |
