I have 45lbs. smoked picnic shoulder and a 19 lb. boston butt. I plan on cooking these in 3 roaster ovens. How many will this serve? What is your suggestion for cooking,also I will be serving this at 2pm but plan on cooking during the night what are my timelines to make sure the meat is save and ready to serve I would like everything on the table by 1:30. I will be serving potato salad, green beans, rolls and dessert. I will also have fruit & vegetable trays. I would like to know how many servings the pork will make, it will be buffet style, so I can decide if I want to also serve chicken or maybe baked spaghetti with a meat sauce.

I am assuming these are raw, bone-in weights, about 65 pounds. You will have just enough for 100 if YOU bone out and slice the meat; if it is a carve it yourself situation or heavy eaters, you would add about 10 pounds more. I would not add chicken or spaghetti unless I knew there were non-pork folks in the crowd. I might very well add a roaster of beans or mac and cheese; simple, and would also take care of the non-pork eaters.

I'm trying to determine how much ground beef and boneless skinless chicken breast I will need to feed 70 adults and 30 children? (I plan to make sloppy joes and hot shredded chicken sandwiches)We will also be serving traditional sides, salads and dessert.

About 16-20 pounds of raw ground beef, about the same raw chicken, but I would not use breast or all breast. Boneless thighs are juicier, chickeny-er and cheaper.

Hi. I need to plan a meal for about 110 people. We are making shredded meat sandwiches. I wanted to confirm that we should get a roast (and slow cook it then pull it apart) and how many pounds would I need to fee that many people?

Multiple roasts, 35-40 pounds raw boneless, will give 26-32 pounds cooked. If you cook, shred, and put in the sauce, then chill or freeze, the meat will plump up even more for absorbing some sauce, tastes good, too.

Plan on Ziti or lasagna, mot sure how much to by for the ingredients. Cooking for 100 Toss salad, garlic bread fruit tray, banana pudding and chocolate fluff will also be served.

cooking for 800 to 1,00 people on grills.
Hi Ellen,
Need some advise!!!!!
Our facility is celebrating it's 60th year of service and we want to grill whole hogs. How many do you think it woud take to feed from 800 to a thousand people and what size should we purchase, 60 to 80 Pounds each? Also, would it go furthur if we made BBQ out of it or some of it?

Oh, girl, go to the BBQ and brisket page and follow the pig roast links and then HIRE somebody to do this for you!!! You need about 1 pound whole pig per person, and that is 16-18 whole pigs (at 2 persons per pig, an all day commitment- 30 volunteers)!!! Consider roasting 1 pig and doing all the rest roast pork and pulled pork shoulders.
