Help Preparing for 200 Persons Wedding Buffet

Help Please...
I am preparing to go shopping for my wedding dinner. I am expecting 125 guest but I would like to prepare for 200 just to be safe. My menu is as follows:
Ham
Meatballs
Chicken Wings
Potato Salad
Spaghetti Salad
Rolls
Relish Tray
Fruit Cups
Please let me know how much of what that I am supposed to buy.

Oh, my. For just general amounts, see the "serves 100 and the BBQ/brisket, and other planning pages. But did you read "Self-catering your wedding? Please click over and read this right now.

You don't tell me how long between the shopping and the wedding, what freezer/ storage you have, seated vs standing service, time of day, liquor, who will cook and where you will serve. All of these affect your amounts. But most important, you will need about 5-6 people not in the wedding party to serve this. Do you have HELP???

Retirement Party
I'm having a Retirement Party for my husband. It will just be a Luncheon Buffet type affair, sandwiches, etc. One item I'm planning on serving is Buffalo Hot Wings. I'm planning on 75 people. How many lbs should I fix?
