Serving approx. 200 people Stuffed flank steak and pasta bar. Buffet style. They want a red and white sauce option. Any ideas of a recipe for Alfredo sauce. Also, How do I keep cooked pasta easily servable in buffet line? Thanks. |

You sauce the pasta in the chafers for the best keep-it-servable option; I don't know any good way to keep perfectly plain pasta nice on a serving line. See the folks at chef2chef.com for help with your pro problems. |
