salad for 40

09/04/08 		I'm making a couple different salads (Caesar and Spinach) for 40 women for a bridal shower luncheon I'm helping host There will also be finger sandwiches served as well. I'm planning on buying pre bagged Romaine hearts and baby spinach How much of each hould I buy ??
And also, how many finger sandwiches per person should I plan on Thanks, Kathy

09/04/08 		For an actual lunch, you need about twice what you need for afternoon tea, and the quantities are discussed in some detail on my tea party pages and the sandwich event page. Take a look at these, prepare an estimate and post it, and I will be glad to check it for you. I can't do it off the cuff, for example, I don;t know if you mean fruit salad, pasta salad, tuna salad, etc; or if it is over lunchtime or midafternoon; all this makes a difference. I use a shade less than half the amount for 100 for 40; but if for example you were making a fruit salad and a green salad, you would want about 30 servings of each to make sure everyone got their choice.
I actually allow 2 whole sandwiches worth of sandwich for lunchwith finger sandwiches and pinwheels- people eat more than you would expect because they like to try everything and it is so cute.

09/05/08 		Thanks Ellen .... I will go check out that page you are talking about .. Actually what we're planning is a Spinach Salad, a Caesar, some type of Pasta / Rice salad, and then tuna sandwiches, and egg salad finger sandwiches as well... Do you think it would be a good idea to have some soft potato rolls as well ?? Thanks for your help

09/05/08 		Hi, no, when ladies lunch with this type menu you don't need rolls. Maybe some interesting crackers? 1-2 pounds- for folks who just have salad.
