1 pound dry is about 6 1/2 cups cooked. A bean serving is 1/2 to 1 cup cooked, depending on the use (main dish entree, side dish, etc). A ball park figure is 1 gallon total of side dishes for each 10 people at BBq's, so I often allow 3 1/2 gallons= 14 quarts= 64 cups for baked beans or ranch beans for 100 people. Works out to 10 pounds. I HAVE made as much as 6 pounds for 50 people, but that was really enthusiastic bean eaters and a truly delicious butterbean and maple syrup side dish... Hope that helps. |

I am putting together a food "survival chest" in case of emergency. (In Portland OR we are always under the threat of the impending great earthquake.) The basic staple is brown rice and beans (pinto/black) because they are cheap, durable and nutritious. Since this wil be the main, if not only, course. I would like to know how man MEALS (as opposed to servings) I can expect out of a 25 lb bag of beans. I figure a mix of heavy/light eaters. Thank you. |

If you are planning on beans and rice, you MUST plan on water storage, too, it takes a LOT of water. A 25 pound bag of beans cooks up to 170 cups, so next time you are eating beans, measure your serving and then you know what will work out for you. |

I need help. I need to prepare beans plain for 100 people how many pounds do I cook. The next day I need to prepare chili beans w/hamburger and canned tomatoes for 250 people how many Pounds of beans do I cook and how much hamburger do I need. Also, how many pounds of hamburger do I expect to cook to make meatloaf for 50 people. And one more thing I need to make mashed potatoes for 250 people how many pounds of potatoes do I buy and cook. Connie, there are amounts and recipes for all these dishes already on the site. Use the search feature, or go to the big pots page and dcan down the rcipe listings. There is a whole section on chili. You will want about 30-35 pounds of ground meat for each 100 for meat loaf. |

If you will keep them over a low, simmering temp and add a mildly acid food such as tomatoes or a cup of vinegar after the first hour, they will stay firmer. When they are done enough, take them off and drain them. Then chill. |

Hi, Mike, what are you doing on the pinto bean thread? It is OK to start a new thread! Sirloin tip is lean and boneless, you can do a generous serving for 2 from 1 pound raw. It does not reheat very well- it does need to stand 15-30 minutes after cooking before slicing to tenderize and re-absorb juices. As the folks at America's test kitchen say, not everything needs to be served hot- this meat is hot and tough or warm and tender. Let it rest, don't reheat... |

I have read the page on cooking pinto beans in a pressure cooker. I am wanting to make refried beans so that I can make large quantities of burritos for my freezer. I have an All American pressure cooker by Wisconsin Aluminum Foundry Company, and it says NOT to cook beans or grains in the pressure cooker. Well shoot...isn't this the best way to cook them? If I follow the advise of using oil, and only filling half full, will it be ok to try it? Their concern is stuff foaming to an extent that blocks the pressure release valve. |

The foaming/skins are what everyone worries about. Soak the beans overnight. Rinse well, wirking through them with your hands, rinsing again, this takes off the extra foaming components and extra skins. Use the oil and half filling. Add fresh water. Then DO NOT leave the kitchen; watch the rocker- if it stops rocking, which indicates the valve has blocked, immediately remove from heat, cool in cold water and open, then cook open until finished. In all likelihood, you will not have a block; with this method, most beans except for soybeans do not foam. The new pressure cookers have the rocker and a separate pressure release safety valve, making them even safer. |

Thanks for the advice Ellen. I'm going to try this in the morning. I read somewhere online (but can't find it now) that you can put the rack from the PC on TOP of the beans and water to also help keep the skins down. Have you heard of this or would you recommend this? |

OK, the thing about the altitude is, water boils at a lower temperature. Use fresh beans, old ones are harder to tenderize. You may need to double your time, and also, be sure to presoak and to avoid adding salt or acid ingredients untill the beans are tender. You will have to experiment a bit. |

1 pound of pintos makes about 6 1/2 cups, which is 8 main-dish servings. I use 8 pounds of dried beans per 100 for a side dish, but as much as 12 pounds per 100 for a main dish. You want 40 pounds of potatoes per 100. You want2 1/2 to 3 gallons slaw per hundred (it takes 20 pounds of whole cabbages to make slaw for 100). You will have many gallons of cooked beans (about 20 quarts or 5 gallons per 100), you need 2 electric roasters or 4-5 6 quart crock pots to keep these warm. |

8 corned beefs is too many for 1 roaster if you are simmering them. You have enough sides for 25-30 people and enough meat for 40 or more- how many are you expecting? What I would do, is cook the corned beefs in both roasters til done, drain one roaster, transfer all the meat to the one dry roaster and hold covered at about 275, then simmer/cook the veggies in the other roaster, allowing about 1 hour for the potatoes, 30-45 minutes for the carrots unless they are mini, and no more than 1/2 hour for the quartered cabbage. |

I allow 10 gallons of sides total for each 100 people, not counting bread, dessert, etc. I allow 2 1/2 to 3 gallons slaw and beans and 4 to 4 1/2 gallons potao salad or potatoes for 100 people. |

Eek, I don't ever use the instant potatoes as potatoes, although I have occasionally used them to thicken sooups and stews. Just get a good brand and follow the directions, I guess... You could make ahead and freeze using the freezable, holdable mashed potato recipe in big pots. |
