Pesto Sauce and Steamship Beef

I am making penne pasta for 200 people as a side dish. I am serving it with pesto sauce and adding roasted red peppers. what quantity of each do I need? Also, I was told to buy a Steamship Beef for this event as it will be cheaper than buying several smaller bef cuts. what are your feelings on this matter?

If you are the same Susan that posted on the other thread, this is not a safe or practical menu for this size group in this venue. The larger the roast, the easier to cook, IF you have the right ovens. See the roast beef page.
