How can I tenderize an already cooked eye round roast ? I cooked it slowly on the top of the stove and it is not tender |

As I cautioned in the beef roasting article, eye of the round is one tough roast. Since it is already cooked, I would mince it up and simmer it as chili, hash, vegetable soup, etc. It needs to simmer at about 160 internal temp until the collagen dissolves in order to tenderize. |
