In the recipe on this site for Worthington style gluten loaf, can tapioca flour/starch be substituted for the 1/2 cup of minute tapioca. I am having a hard time finding it.

Quite a few other brands of instant tapioca are available. I have not tried this sub, I have tried presaoking the tiny regular tapioca. Measure, cover with water plus 1/2 inch, add the entire contents to the recipe. OK but the texture with the instant tapioca is better. If I were trying the flour, I would use only half as much, it is MUCH more densee than the pearls. |
