this will be a fund raiser dinner with mashed potatoes, veg, and desert. we think 1 1/2 biscuit with the chicken gravey. thanks |

If this is basically a chunky gravy, you want about 3 ounces ready to eat meat per person (4 ounces raw, boned, skinned). If you need pieces to go on the biscuits with gravy over, you need about 4 ounces ready to eat- 5 ounces raw. In our area we can get boned skinned chicken thighs. Dark meat is moister and has a more chicken-y flavor. I would ,make the biscuits maller and serve two- it looks like more. Use real chicken broth to make the gravy. 1 pound of raw whole chicken makes 1 full cup of meat. 1 pound of boneless skinned chicken is 2 cups. |
