You need about 1 1/2 cups stew per person if you are planning some sides. There are several different types of recipes for this classic- some with just chicken, some with mixed meats including rabbit. What do you have in mind? |

I am also planning a brunswick stew but for 125 people. What is the ratio on boneless, skinless vs. bone in chicken? I am not sure if I want to debone this much chicken. How much bone in chicken would I need and if I decide to go boneless how much boneless chicken would I need to buy? |

whole chicken, you need twice as much as boneless skinless. You want 6 to 10 ounces whole raw chicken depending on the other meats in the stew. |
