Cooking rice for 24 people

09/05/02 		How to I figure how much white rice to cook for 24 people? I am cooking a Jambalaya & do not know the correct measurements.

09/21/02 		When I cooked regularly for 25 people, who were pretty big eaters, I used one 5 pond honey can full of long grain rice and 2 of water for one meal. With Uncle Ben's you need less water, about 1 3/4.

I put it in an oven-safe pan that was large enough to make a layer less than 4 inches deep. I brought it to boil on top of the stove (about 20 minutes), covered it tightly, and put it in a 325 oven to finsh. For brown rice, I boiled it covered for 10 minutes before putting it into the oven. The rice will hold if you turn the oven down to 180 when it is tender.
