i would like to pre-slice 25 pounds of arm roast with my slicer instead of waiting after it is roasted. how does this change the baking time and temp? |

Carl, I would NOT slice before roasting, it will cook too fast and be _very_ tough. Use the low and slow method, let stand 1/2 to 1 hour after roasting (or chill immediately), then slice. Reheat just like the turkey reheating instructions in holiday cooking, if you do all this the day before. |
