How much food should be prepared for a Christmas brunch for 30 people? Menu includes: ham, breakfast egg casserole, quiche, hash potato casserole, breakfast rolls, salmon, and roasted vegetables. This is my first large party. I only have one oven but I have an electric roaster too. |

You want to use 1/3 the amount for 100. You want 3 ounces ready to eat salmon per person, and about 3 dozen eggs for the casserole and enough quiche for one modest piece per person (I don't know how big you make them. 8-10 pounds hashbrowns as the base of the potato casserole. 1 pound veggies for each 4 people. Sweet rolls, depends on the size, 1 per person if large, 2 if small or more than one flavor. Do not forget coffee, mimosas or bloody Marys or whatever, a nice assortment of juices or a citrusy fruit salad. |
