Planning Christmas dinner for approximately 32 adults and 5 children. Serving turkey, brisket and spiral ham with several veggies and side dishes, buffet style. How much turkey, ham and brisket do I need?

For this size group, if you don't know the split of tastes, you have to make more than you'd think in order for everyone to get a first choice. I would do 2 12-13 pound turkeys (better meat than a 20 pounder and more legs and wings for the kids and kids at heart, 8-9 pounds ready to eat boneless ham and and one very large brisket, which you should slice and serve.

About 3 pounds/ 6-7 cups dry rice will do unless they are very big eaters.

Hi there I am in a tizzy, A clients wants me to cook dinner for her and her family. It is a total of 15 adults and 5 children. She wants me to cook some of the bare staples of the meals but she wants to to give a price. So how do i give her a fair pfice?

This is a board for home cooks, so I don't do pros- but:

Take a look at the private chef boards and forums across the internet for some help here. A rule of thumb might be, about 3 times the cost of the food if it is a drop off of cooked foods ready to serve, about 4 times to cook and serve. If she is providing all the food and you do not have to shop, then estimate your time including cleanup as well as prep and service, and decide on your hourly rate. Yhis assumes that nothing is especially fancy or complicated prep.
