Been struggling to make bread with only soya flour - result a dense bread which dosen't rise . Can I add either gluten powder or xanthan gum to get a reasonably fluffy bread ? If so in what proportion and when to be added . Will really appreciate help .

You are trying to make a bread with beans- there is no mesh of protein chains to catch the bubbles and let it rise!
Use 2=3 tablespoons of gluten in each cup of flour. Use some barley flour (very low glycemic index, high fiber) and Oat bran for grains. Don't forget the salt to strengthen the gluten. If you get a recipe you like, send it in.

tried making soya bread in breadmaker, as per "Dina", it doesn't rise.
Have you successful receipe for making soya bread in breadmaker?
Do I use gluten and oat bran? Would like complete recipe with cooking time if poss.
